JERK CHICKEN MANGO "BURGER"
MAJOR KEY: You can use a wet jerk seasoning to make sure the chicken isn't dry. Also, I use chicken thigh in this recipe because it will turn out a lot more moist than chicken breast. Also, when I toast the bun, I do not wipe the skillet I used to cook the chicken in. Those juices and bits make the bun 🔥🔥🔥
INGREDIENTS
2 boneless skinless thighs
Few thyme sprigs, leaves picked
1/4 cup of jerk marinade
Juice 1 lime
2 sandwich bread rolls (I like brioche, pretzel rolls or even a gigantic biscuit could work
½ cup fresh sliced mango
½ cup guacamole or 1 sliced avocado
¼ cup shredded lettuce (Little Gem, Butter, Romaine, etc.)
4 slices Manchego cheese (or your favorite melting cheese)
Your favorite condiments
Olive oil
DIRECTIONS
- Put the chicken thighs in between pieces of cling film and bash with a rolling pin to flatten (normally I wouldn't advocate violence against thighs, but this is in the name of food). Mix together the thyme, oil, jerk seasoning, and half the lime juice in a bowl. Add the chicken and leave to marinate for at least 2 hours (overnight preferably).
- Heat a griddle pan until hot over medium high heat with a tablespoon of oil and cook the chicken for 4-5 mins each side or until cooked through. Remove from the heat. Toast the cut sides of the buns for 1 minute in the grill pan (with buttah if you wanna be extra)..
- Time to assemble! Feel free to spread mayo, mustard or your favorite condiment on the bun first. Put the cheese on the bun first, then the hot chicken, mango and guacamole or avocado and a handful of lettuce. Squeeze over the rest of the lime and top with mayo and ketchup, if you like.
