JERK MARINADE
MAJOR KEY:
1. If this is your first time using peppers, use gloves.
2. For a more intense jerk flavor, leave out the fruit and use half the onion.
3. For less heat, substitute scotch bonnet with habanero.
INGREDIENTS
4 scallions chopped
2 tbsps fresh ginger chopped
1/2 medium onion, chopped
3 tbsps fresh thyme
6 garlic cloves chopped
2 tbsps Tastic spice*
2 tbsps dark brown sugar
1 tbsp Tastic sweet*
1 tbsp white pepper
1 tbsp allspice
1/2 tbsp grated nutmeg
2 tbsps soy sauce
1/2 cup chopped mango or mango puree
1 Scotch Bonnet Pepper
DIRECTIONS
1. Combine everything in a blender and blend until smooth. Adjust taste and heat to personal preference.
