Winter Pasta Salad


MAJOR KEY: Cold pastas benefit from being allowed to "marinate". Make this pasta the day or night before and let it develop overnight in the refrigerator.



1 lb. box of Farfalle, Ziti or Bow Tie Pasta

4 cups baby spinach leaves

½ cup dried cranberries

1/3 cup crumbled walnuts (plus more for garnishing)

12 oz. mandarin oranges, drained

¼ cup parsley leaves, roughly chopped

3/4 cup Tastic Vinaigrette*

3 tbsp. rice vinegar

1 tbsp. Tastic spice

1 tsp sugar

½ cup (plus more for garnishing) crumbled feta or goat cheese



  1. Cook pasta according to package instructions, drain and rinse with cold water. Set aside.

  2. In a large bowl toss together all ingredients.  Pour into serving bowl and garnish with more crumbled cheese and walnuts.

  3. Serve it up!
