Slow Cooker Tri Tip Roast

SLOW COOKER TRI TIP ROAST

MAJOR KEY:  You can substitute meat with this recipe.  Some meats that work well in a slow cooker are: chuck roast, beef brisket, lamb shanks and short ribs.

INGREDIENTS
3 lb boneless tip roast
1 large onion chopped
3 cloves garlic
8 potatoes peeled and quartered
3 stalks celery
8 carrots peeled, cut into 1" pieces
3 tbsp Tastic spice
tsp smoked paprika
tsp cumin
tsp chili powder
1 Lipton® onion soup packet
1 - 10.5 oz can cream of mushroom soup
1 1/2 cups beef broth
1 - 10.5 oz can diced fire roasted tomatoes
DIRECTIONS
  1. In a 6-8 quart slow cooker, add onions, garlic, potatoes, carrots and celery.
  2. In a small bowl, add seasonings and then rub onto roast.
  3. Heat a large skillet over high heat with a drizzle of olive oil.
  4. Sear the tri tip on both sides for 3 minutes.
  5. Place roast on top of vegetables.
  6. Sprinkle onion soup packet on top of roast.
  7. Next add mushroom soup, beef broth and tomatoes.
  8. Cook on high 8 hours or low 12 hours.  It's done with meat breaks apart easily with a fork.
