“Pulled” Carrot BBQ Sandwich

INGREDIENTS

2 1/2 cup grated carrot

2 tablespoons olive oil

1/2 cup homemade vegan BBQ sauce**

Tastic Spice*, adjust regarding taste

½ cup chopped kale

2 tablespoon olive oil

3 tablespoons of lemon juice

Whole wheat buns or your favorite buns or bread

 

PREPARATION

  1. In a large frying pan, under medium heat, warm olive oil.

  2. Add the grated carrots. I used a hand grater and grated the carrots on the thicker panel. I used 2 medium peeled carrots to obtain 2 1/2 cups of grated carrots.

  3. Place the grated carrots onto the frying pan and roast the vegetables for 5-8 minutes until crispy and hot. Stir constantly to avoid the carrots to burn.

  4. Add the homemade BBQ sauce, stir well to combine and remove from heat.

  5. In another bowl add the kale, 2 tablespoons of olive oil, lemon juice and 1 tablespoon of Tastic spice.  Massive and mix the kale until it’s fully coated.  Set aside.

  6. To assemble, open bun spoon carrot BBQ on bottom bun.  Add kale mixture on top and finish with top bun. Enjoy!
