Pico de Gallo

PICO DE GALLO

 

MAJOR KEY: Pico de gallo is such a fresh and delicious salsa.  You can add a number of little twists to make it even more special.  Sometimes I add a stone fruit like peach or plum. Or I add a savory deep flavor like sun dried tomatoes.  Whatever you experiment around with adding, use about a 1/2 cup of it for this recipe.  Adjust and tweak it from there.

STUFF YOU MAY NOT HAVE: Microplane

INGREDIENTS

4 vine-ripe tomatoes, chopped

1/2 medium red onion, chopped

2 green onions, white and green parts, sliced

1 Serrano chile, minced (obviously omit if you don't like heat.  Add more if you want to ramp it up)

1 handful fresh cilantro leaves, chopped

3 garlic cloves, minced

1 lime, zest and juiced

1/4 cup extra-virgin olive oil

2 tsps Tastic spice*

 

DIRECTIONS

  1. In a mixing bowl, combine all ingredients together. Toss thoroughly. Let it sit for 15 minutes to an hour to allow the flavors to get to know each other :)

NOTE:  If you want it smoother, put it in a food processor for a few pulses.
