ISLAND DARK & STORMY
Try my version of the Dark & Stormy with your friends. Spicy & delicious, this cocktail is perfect for sharing.
MAJOR KEY: Some people make this drink in a layered approach. If that is what you are going for add get a highball glass with ice. Then add ingredients in layers: pineapple, lime juice, ginger beer and then rum.
Also, roasting a whole pineapple, dicing it up and storing it in individual portion zip locks is a way to cut down steps. A roasted pineapple flavor sets this drink off!!!
INGREDIENTS
2 ounces rum -- dark rum (your favorite)
4 ounces ginger beer
1/2 ounce lime juice
1 ounce chopped pineapple
Pineapple wedge for garnish
DIRECTIONS
Mix the rum, the ginger beer, and the lime juice and the pineapple in a tall glass full of ice cubes. Stir. What you are looking for is a good ratio of ginger beer to rum. You want to taste the spices from the beer and richness of the rum. Feel free to play with the proportions.
