BACON KETO MEATLOAF
Serves 6
INGREDIENTS
Cooking spray
1 tbsp.extra-virgin olive oil
1medium onion, chopped
1stalk celery, chopped
3 cloves garlic, minced
1 tsp.dried oregano
1 tsp.chili powder
2 lb.ground beef
1 c.shredded cheddar
1/2 c.almond flour
1/4 c.grated Parmesan
2 eggs
1 tbsp.low-sodium soy sauce
Tastic spice
6 thin strips bacon
DIRECTIONS
- Preheat oven to 400°. Grease a medium baking dish with cooking spray. In a medium skillet over medium heat, heat oil. Add onion and celery and cook until soft, 5 minutes. Stir in garlic, oregano, and chili powder and cook until fragrant, 1 minute. Let mixture cool slightly.
- In a large bowl, combine ground beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, soy sauce, and season with Tastic spice. Shape into a large loaf in baking dish, then lay bacon slices on top.
- Cook until bacon is crispy and beef is cooked through, about 1 hour. If bacon is cooking too quickly, cover dish with foil.
