PIE DOUGH
Ingredients
- 5 cups (315 grams) all-purpose flour (spooned & leveled)
- 4 teaspoons sugar
- 2 teaspoon salt
- 1 cup (115 grams) cold unsalted butter cubed
- 1 cup (95 grams) cold vegetable shortening cut into a few pieces
- 1 cup (120 ml) ice water
APPLE PIE
Ingredients
- 7 cups sliced apples (peeled, cored, and sliced into 1/4-inch slices)
- 1 tablespoon fresh lemon juice
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar packed
- 1/4 cup all-purpose flour (spooned & leveled)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 pie crusts homemade or store-bought
- 1 tablespoon (15 grams) butter cut into pieces
- 1 large egg
- 1 tablespoon milk
- Coarse sugar for sprinkling on top optional
SWEET POTATO PIE
Ingredients
- 1 lb sweet potatoes (about 2 medium), ROASTED & SOFT
- 1/2 cup unsalted butter, softened to room temperature
- 1 cup packed light or dark brown sugar (I prefer dark)
- 1/2 (120ml) cup heavy cream
- 2 large eggs
- 2 Tablespoons all-purpose flour
- 1 tablespoon orange zest
- 1 teaspoon pure vanilla extract
- 2 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1 teaspoon salt
