PIE DOUGH

Ingredients

  • 5 cups (315 grams) all-purpose flour (spooned & leveled)
  • teaspoons sugar
  • teaspoon salt
  •  cup (115 grams) cold unsalted butter cubed
  •  cup (95 grams) cold vegetable shortening cut into a few pieces
  • 1  cup (120 ml) ice water

 

APPLE PIE

Ingredients

  • 7 cups sliced apples (peeled, cored, and sliced into 1/4-inch slices)
  • 1 tablespoon fresh lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 1/4 cup all-purpose flour (spooned & leveled)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 pie crusts homemade or store-bought
  • 1 tablespoon (15 grams) butter cut into pieces
  • 1 large egg
  • 1 tablespoon milk
  • Coarse sugar for sprinkling on top optional

 

SWEET POTATO PIE

Ingredients

  • 1 lb sweet potatoes (about 2 medium), ROASTED & SOFT
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup packed light or dark brown sugar (I prefer dark)
  • 1/2 (120ml) cup heavy cream
  • 2 large eggs
  • 2 Tablespoons all-purpose flour
  • 1 tablespoon orange zest
  • 1 teaspoon pure vanilla extract
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 teaspoon salt
