Summer Squash & Zucchini with Meyer Lemon, Honey & Thyme
2 small yellow squashes sliced into 1 in. circles
2 small zucchinis sliced into 1 in. circles
1/3 cup olive oil
2 tbsps. honey
2 tbsps. fresh minced thyme
Juice of half a lemon
1 tbsp. garlic puree
- Preheat oven to 375.
- Mix all ingredients except squash and zucchini in a bowl.
- Place squash and zucchini on a parchment lined baking sheet. Pour mixture over vegetables and bake until slightly tender, 8-12 minutes.
