Cornbread Waffle BLT

CORNBREAD WAFFLE BLT

INGREDIENTS

  • 2 boxes of Jiffy Corn mix (I’m saving you some steps..lol)
  • 1 can creamed corn
  • 4 oz. of sour cream
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1 tbsp Tastic Sweet*
  • 8 strips of cooked bacon
  • 4 slices of tomato
  • 4 slices of roasted squash (completely optional; I added it because it was in my fridge, lol)
  • 2 pieces of lettuce
  • Syrup, to pour over top

 

DIRECTIONS

  1. Preheat your waffle iron to a medium-high setting.

  2. In a medium bowl combine cornbread mix, eggs, cream corn, Tastic Sweet, cheese and sour cream.  Mix until well combined.

  3. Once your waffle iron is heated, spray with nonstick spray.

  4. Pour one cup of cornbread mix onto waffle iron.

  5. Depending on your type of waffle iron, the light will come on when it’s done or it will beep.

  6. Once they are all cooked up, it’s time for toppings.

  7. Assemble as you would a traditional BLT.  Then pour heated syrup over top.  You’re going to need a fork and knife for this one!
