CHOCOLATE COVERED STRAWBERRY CUBES

INGREDIENTS
- 2 c. chocolate chips
- 2 tbsp. coconut oil
- 16 fresh strawberries with stems (depending on your ice cube tray)
DIRECTIONS
- In a medium bowl, stir together melted chocolate chips and coconut oil.
- Spoon a layer of chocolate mixture into the bottom of each ice cube mold, then top each with a strawberry, stem side-up. Spoon remaining chocolate mixture over strawberries.
- Freeze until chocolate is solid, 4 to 5 hours.
