Chocolate Covered Strawberry Cubes

INGREDIENTS

2 c. chocolate chips

2 tbsp. coconut oil

16 fresh strawberries with stems (depending on your ice cube tray)

DIRECTIONS
In a medium bowl, stir together melted chocolate chips and coconut oil.
Spoon a layer of chocolate mixture into the bottom of each ice cube mold, then top each with a strawberry, stem side-up. Spoon remaining chocolate mixture over strawberries.
Freeze until chocolate is solid, 4 to 5 hours.
