Brown Sugar Peach Cake

BROWN SUGAR PEACH CAKE

INGREDIENTS

Cake:
  • Cooking spray
  • 3 c. all-purpose flour 
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 tsp. kosher salt
  • 1 c. (2 sticks) butter, softened
  • 1 c. packed light brown sugar
  • 3 large eggs
  • 1 tsp. vanilla extract
  • 1 c. buttermilk
  • 3 medium peaches, peeled, pitted, and chopped
Icing:
  • 3/4 c. packed light brown sugar
  • 1/2 c. (1 stick) butter
  • 1/4 c. whole milk
  • 1/4 tsp. kosher salt
  • 1 c. powdered sugar
  • 1 tsp. vanilla extract

DIRECTIONS

Cake: 

  1. Preheat oven to 350° and grease a 13"-by-9" baking dish with cooking spray. In a large bowl, whisk flour, baking powder, baking soda, cinnamon, and salt. 
  2. Using a hand mixer on medium-high speed (or in bowl of a stand mixer fitted with paddle attachment), in another large bowl, beat butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition, then beat in vanilla. Add dry ingredients and mix until just a few dry streaks remain. Add buttermilk and mix until just combined. Fold in peaches. Pour into prepared pan and spread in an even layer. 
  3. Bake until a tester inserted into center comes out clean, 30 to 35 minutes. 

Icing:

  1. In a medium pot over medium heat, bring brown sugar, butter, milk, and salt to a boil; cook 1 minute. Remove from heat and whisk in powdered sugar until smooth, then whisk in vanilla.
  2. Immediately pour icing over cake while still warm. Let cool completely.
