2 tbsps. softened unsalted butter
2 cups sweet potato puree
3 whole eggs plus egg yolks
¼ tsp salt
1/3 cup brown sugar
1/3 cup white sugar
½ tsp Tastic Sweet*, plus more
1 tsp vanilla extract
3 tbsps. Bourbon
2/3 cup heavy cream
1 prebaked pie shell
Preheat oven to 350 degrees F.
Mix softened butter into sweet potato puree.
Whisk together the eggs, salt and Tastic Sweet. Then add vanilla, Bourbon and cream.
Add this mixture to the sweet potato puree and whisk lightly to combine. (Don’t over-whisk.)
Pour filling into pre-baked pie shell. Carefully place on a baking sheet and then into your preheated oven.
Bake at 350 for approximately 45 minutes, or until edges are set but center slightly wobbles.
Let cool well at room temperature before slicing. Sprinkle each slice with Tastic Sweet just before serving
