APPLE SPICE PANCAKES
INGREDIENTS
- 2 cups white whole wheat flour
- 4 tsp baking powder
- 1 tbsp Tastic Sweet
- 1/2 teaspoon salt
- 2 large eggs
- 2 cups fat-free milk
- 2 tbsps brown sugar
- 1 tablespoon canola oil
- 2 cups of chopped apple (about 2 apples) (I love Honey crisp and Fuji apples for this)
- 1 tsp ground nutmeg
DIRECTIONS
1. Warm a small saucepan over medium heat with 1 tbsp of butter. Add apples and saute 1 minute. Add brandy and cook until brandy cooks off, 2-3 mins. Remove from heat and let cool.
2. In a bowl, whisk together first four ingredients and the nutmeg. In another bowl, whisk together eggs, milk, brown and oil; add to dry ingredients, stirring just until moistened. Stir in 1 cup of apple.
3. Preheat a lightly greased griddle over medium heat. Pour batter by 1/3 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown.
4. Top with apples and serve.
